I woke up yesterday feeling crummy... migraine & sore throat. After a few hours, my migraine was gone, but my throat was progressively worse. By the end of my work shift, I could barely talk because it hurt so bad. Now, I have had strep before ...many years ago... but nonetheless, I have had this before. BUT this time around is the worst sore throat I've EVER had. I have no clue where I could've caught it as none of the kids are sick...and nobody that I know has had it either. ANYWAYS, I got home from work and went to bed, but after 6 hours of NOT sleeping because I was in so much pain, I got up and went to urgent care. I went in with a fever and a positive strep test... I left with 2 shots in my rear (steroid + pain reliever) and 2 prescriptions (antibiotics + pain reliever) and a note for work.... since I have a fever, can't go to work (darn!)
After about 2 hours... my throat feels great! Thank GOD for prescription pain meds.... I can actually take a drink without pain!
Enough about me....let's talk about yummy food!
Last night's dinner (didn't have time to blog about it last night!) was
Saucy Garlic Chicken:
Step 1: Heat oven to 350 degrees. Grease 9X13 pan. Fill bottom of pan with 10 oz fresh baby spinach.Step 2: Brown 4 chicken breasts on both sides and place on top of spinach.
Step 3: Saute 10 cloves minced garlic in 3 Tbsp olive oil until softened. Spoon garlic evenly over the chicken and spinach.
Step 4: Melt 6 Tbsp butter in saucepan. When melted, slowly stir in 6 Tbsp all-purpose flour until smooth. Gradually add 3 cups of milk. Stir continuously while bringing to slow boil and until mixture begins to thicken. Add in 2 C parmesan cheese; Stir until well blended. Will be a thick creamy sauce. Pour over chicken, garlic, and spinach. Bake covered for 30 minutes (or until chicken cooked through and sauce bubbly).
Step 5: Remove from oven, uncover, sprinkle 1/2 C parmesan cheese on top, and bake additional 5 minutes.
Serve over cooked pasta.
(optional: garnish with diced tomatoes and fresh parsley)
Tim made hummus tonight!
It was his first attempt, and it was GREAT! The recipe he used was : 2 lg onions thinly sliced (sauteed in 1/4 C olive oil for 30 minutes) then dumped into a processor; add 1 full can of garbanzo beans (chick peas), 4 cloves of garlic (minced), 1/4 C + 2 Tbsp lemon juice, 1/3 C olive oil, salt & pepper to taste, and 1/4 C Tahini (optional)... blend all ingredients in processor for at least 30 seconds until fully mixed. Serve with tortilla chips, pita bread, pretzel crisps, or veggies! We personally like garlic, so we used 6 cloves instead of the 4...super good!! And an extra shocker... Xander and Asher LOVED it too! 




I need to try making hummus and see how it goes over here. The chicken looks good, but the chicken looks complicated. lol
