I read through Facebook posts this morning and about 75% of the people were talking about their kid's illness or their own. I read them to Tim saying, this is nuts... how is it that so many people are sick right now? Then, when I get the kids up, Xander is coughing like crazy... no fever, THANK GOD! Asher is fine.... Jonathan is fine! Bella has a fever. Poor Princess Bellarina woke up with and held onto her fever all day- it never got high, but her poor little eyes have been puffy and watery; her nose running; she's been moping around most of the day.
Hate when my kids are sick!
On a happy note for today, Tim was off work (his MLK jr. day off)! Loved having him home! We are rarely together for a full day. His days off are my days to work, so if he's home from work, I am sleeping all day because I had to work. These occasional days that he gets off in addition to Sun/Mon are FANTASTIC! We didn't really do anything phenomenal, but it was nice to see my hubby...it was nice for the kids to see their daddy for more than just a couple hours in the evening! Yay for extra days off!
Dinner was AMAZING! I was a little annoyed by the preparation of the food, but the end result was awesome! I would definitely go through the hassle of making it again!
We had Bacon Wrapped Chicken (recipe found on allrecipes.com ... altered slightly by me)
*4 skinless, boneless chicken breast halves (2 breasts cut in half)
*4 oz cream cheese (cut in 1 oz slices)
*4 slices bacon (cooked, but still flexible)
*1 tsp fresh chives (I omitted & used chopped white onion plus italian seasoning)
*1 10 3/4oz can cream of chicken soup (I used cream of mushroom)
*1/2 C mayonnaise
*1/2 C milk
*1 tsp lemon juice
*1/4 tsp black pepper
*pinch salt (I used much more than a pinch...LOL)
1. Preheat oven to 325 degrees
2. Pound chicken until flat. Place one slice of cream cheese and onions on the breast and roll up. Wrap in bacon. Secure with toothpick & place in 9X13 pan. (I sprinkled salt, pepper, garlic powder, and italian seasonings on top of chicken)
3. In a medium bowl, combine soup, mayo, milk, lemon juice, salt, & pepper (plus I added 1 pressed garlic clove & a pinch of parsley). Mix until smooth and pour over chicken.
4. Bake uncovered for one hour until chicken is no longer pink & juices run clear. (I turned the chicken halfway through cooking time so the top wouldn't get too browned)
5. I served it over 12 oz bag of egg noodles, the sauce was a perfect amount to cover the chicken & noodles!
Let me just tell you...this was YUMMY-LICIOUS!!!

Sounds delish (well except for the bacon :))! And Yeah for husbands having extra days off! but boo for sick babies..

ReplyDeleteSupper sounds good. I picked up a rotisserie chicken at Sam's and made some rice & broccoli. We had a basketball game and a big project tonight so no time for real food.
I just posted your fettucinne recipe on my blog, but this one sounds great too!!! Hope everyone is restored to full health soon.
