Eyes and Surprises

Today was a great day all around!

I took Asher to the Eye doctor today. In the last couple of months, one of his eyes has started to go "lazy"! THANK GOD that his eyesight is perfect...he's just got a lazy little eye!

Let's recap:
Tim's eyes are NOT great
Mine are great!
Xander's eyes ...not so great!

Jonathan's eyes: Perfect
Asher: Lazy, but otherwise perfect!
Bella: Lazy, but otherwise perfect!

In a house where mom's eye are great and dad's are NOT great, it's hard to know how the 4 kids will turn out! Good to know that SO FAR only one of the four have to have glasses! YIPPEE!

Then, after the doctor appointment, I picked up Xander at school and came home. When I arrived home, I found a box full of food on my doorstep! Crazy, huh? I just LOVE unexpected blessings! YAY for free food!!

Tonight ended well! The dinner I "created" was so yummy that Tim said, "This is the best thing you have cooked in a LONG time. You could make this every day and I would never get tired of it...sorry babe, I'm eating it all, you can't have any!" I think that must mean he enjoyed it...I don't know, maybe I've misinterpreted him?? "What is it," you ask???



Cheesy Chicken Broccoli Bake

1 lb chicken diced, cooked
1/2 onion chopped & cooked with chicken
2 Tbsp olive oil (for sauteing chicken & onions)
2 bags of boil in a bag Whole Grain Brown Rice (cooked)

1 lb frozen broccoli (thawed, but not cooked)
1 10 3/4 oz can cream of mushroom soup
1 C milk
16 oz Velveeta (cut into small cubes)
seasonings to taste

Heat oven to 350. Mix in a 9X13 pan all of the above ingredients. Bake uncovered for 30 minutes (stirring periodically to mix in cheese). Broil for couple minutes at end of baking to brown top a little bit.

  1. I love that casserole! I do something similar, but I still like white rice. And I cook the rice with a chicken bouillon cubes in the water. Man...that makes me hungry. And I love when people get all excited about something I make. That's awesome!
