Today was a lazy day. Didn't do much of anything for most of the day. For dinner, we had mom and Nathan (brother) over for his birthday dinner (he turned 21 on Monday)!! Every year for his birthday, he asks for the same dinner: Pasta Olio! Nathan LOVES this meal... in fact, we all do! Tim and I make it at least 1-2 times a month for The Bunch...so I don't mind making it for his birthday!Mom brought Banana Split Ice Cream Cake...SUPER yum finish to a SUPER yum dinner!
Pasta Olio!
1 lb Penne Pasta
1 1/2 lbs chicken
4-5 oz olive oil
6-7 cloves Garlic
1/2 chopped onion
salt, pepper, italian seasonings
Parmesan
*Cut chicken into bite-size pieces; cook in 2 Tbsp olive oil with 4-5 cloves of garlic finely chopped, 1/2 finely chopped onion, PLUS any seasonings you like! *Meanwhile, cook pasta according to box directions; drain and return to pot *Stir in chicken, 2-3 Tbsp olive oil, salt, 2 fresh garlic cloves (pressed), and 2-3 oz parmesan cheese. *Stir until well blended & serve.
