My Pirate Princess- Take 2

In March of last year, my princess became a pirate for the first time! Check out the story HERE! Well, today, almost 15 months later, we did it again! This time to the other eye! This has been quite the process!

A few months ago, I noticed that her "lazy" eye started drifting again, so I made another eye Dr. appointment to have it checked out...sure enough, it measured bad again! Grrr. So, the Dr suggested follow up appts. every couple of months to see if it was getting worse...it was. So we scheduled surgery again. The deal this time though... he wasn't going to operate on the BAD eye, he was going to work on the good one. WHOA! What??!! Yep, I was baffled. I asked around to others who've been in a similar situation and they reassured me that this was normal, but it seemed strange to me. 

Here's the explanation he gave: 

When you align the tires on your car, you can't always just align ONE tire. You have to align them both- even if one is not bad, you have to sometimes align both of them to get them track together in the same alignment.

Ok...so that makes some sense. So, he likened it to the eyes. You might have to work on the good eye to get it to track right with the bad eye. So, after asking around, I decided to go with it. 

The Dr. said that 90% of the time, after working on BOTH eyes, it's done. He said the other 10% of patients might end up having to come back at some point again in the next few years to have it done again. I'm praying REALLY hard that my Pirate Princess is in that 90% !!

So, this morning, we got to the hospital by 9am for her 10am surgery. I was VERY nervous. Asher had this surgery done in October (click HERE for that story), and he did TERRIBLY with the anesthetics! In fact, he did so badly that the hospital ended up admitting him! So, I was justifiably concerned! Thankfully, the anesthesiologist listened to me and gave Bella extra tummy meds so she didn't throw up one time! WAHOO! Anyways, they gave her the goofy-juice (Versed) to help calm her down, but it had the opposite effect... it riled her up and ticked her off. So when they took her back to surgery, instead of calmly going back with the nurses, she stood on the bed screaming,

 "NO, I WANT MY MOMMY!"

Heart-wrenching!!

She did well in surgery. It took a little while to get her oxygen levels up to where they like them to be to discharge, but FINALLY they did. What did it take?? Funny story. The Children's Hospital always gives kids a little stuffed panda bear when they have surgery. I would guess in the midst of all her thrashing about and screaming they forgot.

 So the first thing she says after she wakes up was, 

"Why those people no give me a bear?"
  
HAHAHAHA

So I suggested she ask the nurse for a bear. The nurse told her (knowing her oxygen was low) that to get the bear she'd have to cough some and she'd have to jump up on the bed to get it. So we made her, in all of her loopy-ness, stand up and try to jump on the bed to reach up for the bear! AND IT WORKED!!! Her oxygen levels came up and they were able to kick us out of recovery! Yay! 

They gave us our check out instructions. We've heard it all before...except one. One very important instruction that I couldn't believe nobody had ever told me before... 

"Avoid blunt force to the surgery site for at least 10 days"

Really?? So, I can't punch her eye for the next 10 days, but after that it's okay? LOL... who the heck writes these things??? I'll  be sure to keep this in mind.......

She vegged out on the couch all day and night until bedtime! I'm hoping she'll feel better tomorrow. Just before I put her to bed, she said there was two Ashers across the room! LOL... the doctor had said she might see double for a day or two, but she and Asher never did before, so I didn't expect it this time! It was fun testing her.. "how many tvs?" "how many daddies?" etc! Hopefully she can walk without incident tomorrow...it might get a little tricky! This is her picture at bedtime- my poor baby  :(

Embrace the Camera May 24, 2012

I LOVE doing  Embrace the Camera day, but I have forgotten for the last few weeks!

SO... here we are again... forcing my oldest to take pictures of me!! Sadly that leaves him out of the pictures WITH me, so I posted a blog post today all about him ... click HERE to see that one!

 I've been really out of the blogging loop lately! It's sad really, but it's for good reason! I've been helping a friend out by babysitting her beautiful 19 month old boy/girl twins a couple days a week. I bring The Bunch over to her house 2 or 3 days a week... add it up folks, that is SIX kids ages 19 months, 19 months, 3, 3, 4 and 6! By the time I finish an entire day of keeping all these GREAT kids, I am worn out! I don't know how moms with six kids do it!! After all day with these kids, I still have to cook dinner and clean the kitchen and bathe MY kids plus put them to bed. By 8pm, I'm done for the night! DONE!  SO... I say all that to explain why I haven't posted much in quite awhile. Even the fun posts like my 10 on 10 or my Embrace posts... nope... no time for those! OH... and I've even had recipes I wanted to post, but UGH, my fingers were even too sleepy to type! LOL! 

So, today, I was determined! I wanted to blog! It's been 4 WEEKS since my last post - coincidentally it was also an Embrace the Camera day! It's funny the things that get me to my blogger account! HAHAHA! I am sitting here at my friend's house during naptime... 2 out of the 6 kids are napping... MY 4 are not! They are driving me crazy- here's a sample of our afternoon: 

Me: Lay down
Child: Ok
Me: Stop that
Child: Ok
Me: Be quiet
Child: Ok
Me: I said LAY DOWN
Child: Ok
Me: If I have to tell you again....
ALL children: OK MOMMY!
and yet it continues ... for the whole 2 hours the babies are napping... UGH!


Anyways, as I sit here during nap time today, I decided to post my E.T.C. pictures for your viewing pleasure!! I KNOW YOU'RE THRILLED!!! So, without further adieu.... my GORGEOUS self with my Asher and again with my three littles: Asher, Jonathan and Bella (they weren't very excited to be posing, but oh well)!!!

I have a 2nd Grader???

How is it even possible that my oldest kid is now a second grader? It seems like yesterday that I wrote a note to my friend, Danielle, at work and said "It's positive"... she was clueless of what that meant! LOL... then when it hit her... OMG... she was SO excited! Now, almost 7 years later, I am looking at my little man in awe that he has just finished the 1st grade!

He makes me proud every day. Last night he got out of bed and said, "Mommy, I can't sleep because I'm laying in bed thinking about what if I was a bad kid instead of a good kid?" 

I assured him that he is NOT the bad kid...he is always the good kid and he'll always be the kid that will help his "bad" friends make the good choices! I assured him that he's a good boy and he has nothing to worry about! I love that he worries about "what if" he's bad! I LOVE that he so desperately WANTS to be good! I LOVE that kid!

So, here you can see Xander's before and after... his 1st and last day of the First Grade! Isn't it amazing how much a kid can change from August to May??

Embracing Daddy Love

Today is Thursday...that means it's "Embrace the Camera" day... I've been slacking BAD with my blog, but I had a great picture of daddy with Asher last night. SO...I had to share with my Embracing Blogger Buddies. If you want details of what "Embrace the Camera" is all about, click here!

I ran to the store last night for a few minutes. When I got home and walked in the door, this is what I saw: 


Asher got these Poingo Books for his birthday last year. You upload all the info from the book to this handy-dandy pen and go to town! He loves it... all he has to do is touch the book somewhere with that pen, and it "magically" knows what he pointed to! He calls them his magic books! Anyways, I LOVE pics with daddy involved... I LOVE looking at other blog posts of people showing off the daddy-love! SO, I had to show off our daddy-love picture too! Two of my most amazing men, sharing Poingo! 

Gotta Love it!

10 on 10- April 2012

Today is one of my favorite days to blog... April 10th! 10 pictures in 10 hours on the 10th day of the month! BUT, before I get started with 10 hours of our day, I MUST say happy birthday to a very special 7 year old girl... my friend's daughter...

OK...here's 10 hours of our day...

a day in the life of the Boni Bunch!


8 am: My Bella's curly locks- I can't say enough how much I absolutely LOVE her hair- not sure where the curls come from, but they're so pretty! (no, I'm not biased)


9 am: Jonathan and Bella trying to lift the big concrete ball in front of Target (they're SO strong!)



10 am: Line up of my littles and Tami's twins, Lilly and Elly, with Tami (plus 2nd set of twin babies in her belly) in the background



11 am: My amazing deals that I found at Walmart... YES, after leaving Target, we went to Walmart! I'm so glad that I did. Each of these items (dog not included) were clearance priced at 25cents ... CRAZY CHEAP!


12 noon: Jonathan and Asher enjoying their pizza lunchables!


1 pm: Stole a kiss from my youngest gentleman: Jonathan!!




230 pm: Ugh... getting behind on my HOURLY pictures...! Here's my pretty princess sleeping peacefully!!




330 pm: My life-saver on days like today! Made ranch pork roast in the crockpot today, then served it over bowtie pasta! Super easy and DELICIOUS!



530 pm: Soccer Practice for Xander- This pic caught him in the middle of a kick!


Ok... so I realize that I did a TERRIBLE job doing just a 10 hour window of my day, BUT at least I took 10 pictures through the day, right? LOL... Oh well! Maybe next month I'll do a little better!

and last, but certainly not least....

730 pm: Tim and Xander reading his book for homework before bedtime! Cute, right?? Perfect ending to our day :)

The Boni Bunch Easter

We had fun coloring eggs, then hunting for them around the house and in the backyard! The pictures aren't the BEST of quality since they were taken by cell phone, but wanted to share our Easter weekend with my blogger buddies!

Our Easter Dinner


We had my mom and my in laws over for dinner last night. I didn't want to do our "normal" Easter dinner of Lasagna with homemade sauce plus meatballs. Tim suggested chili ...just 'cause it would be easy to throw together and serve. But no!! NO... I wanted to go all out crazy! LOL

I decided I wanted taco salad (Doritos, taco meat, lettuce, cheese, kidney beans, olives, tomatoes, onions, red/yellow/green bell peppers, salsa, sour cream, avocado) It was delicious!! BUT, did I stop there?
NOPE! I did not!!

In addition to my taco salad, I wanted Chicken Tortilla Soup.
Did I know how to make it?
NOPE, sure didn't!

So, I consulted my favorite uncle... Uncle Google! (I'm convinced my uncle knows EVERYTHING!) One of the first links he gave me was for Pioneer Woman's Chicken Tortilla Soup. It sounded so good... I got everything I needed and started cooking... well, started prepping- then cooking! It takes lots of prep-work, but it is SO worth it! You can click the link above to see PW's recipe, but I tweaked mine for what I had on hand...so I'll post below what I did!

First off... here's a picture so you can see how yummy...

you KNOW you want to know HOW I made it since you can see how beautiful it is, right??


OK, here's the ingredients:

3 boneless skinless chicken breasts
1 yellow bell pepper diced
1 red bell pepper diced
1 green bell pepper diced
1 medium onion diced
5 cloves garlic chopped
5 cups chicken stock (5 C boiling water/5 chicken bouillon cubes)
1 15oz can black beans (drained, not rinsed)
1 15 oz can kidney beans (drained, not rinsed)
1 15 oz can RoTel (diced tomatoes with chilies)
3 Tbsp tomato paste
5 corn tortillas (sliced into even pieces)
3 Tbsp corn meal
Seasonings
(I used Lawrys seasoning salt, onion powder, chili powder, cayenne pepper, salt, pepper, & cumin)

2 Tbsp olive oil

Here's what I did:

-Boil chicken until cooked through. Using 2 forks, shred all the chicken.
-In soup pot, saute veggies (peppers, onion, garlic) for 2-3 minutes
-Add chicken and stir around to mix up well.
-Add seasonings (don't overdo it though...may need to add more later)
-Add RoTel & mix well
-Pour in broth, bring to a boil
-Add beans (black & kidney)
-Add tomato paste
-Bring to boil again, reduce heat to simmer for about 30 minutes.
-Mix corn meal with little bit of water to make a paste-like substance and add to the simmering soup (this gives the soup a little extra corn-flavor)
-Let simmer about 30 more minutes.
-To quote the Pioneer Woman, "It’s time to give it a stir and take a nice taste or two. You really want the seasoning to be right, so add more salt if needed, more cumin if you need more of that deep, distinctive flavor, or more chili power if you need more heat."
- Time to turn off the burner...let it sit about 15 minutes before serving. Toss in your cut up corn tortillas- by the time it's ready to serve, they'll be cooked enough to enjoy!

For the toppings:
Avocado
Sour cream
Shredded cheese
(I used cheddar, but PW suggests Monterey Jack cheese)

Olives
Onion
Crispy tortilla strips
(you can fry some corn tortilla strips, but I bought these)



This recipe is a DEFINITE keeper! Can't wait to make more!!
