MY LOVE OF FOOD!!!
I love cooking... I love eating (just look at my belly, right!!??) I am not, however, very creative. I can't just come up with great things to cook. BUT, my husband and I are a great pair! He loves researching recipes... he has found SO many fun and delicious things for me to cook. He finds, I execute, and we both enjoy!
Some of my favorite recipes include:
Bacon Wrapped Chicken - click there to see my blog about it. BUT, it's my go-to recipe. Whenever we have people over for dinner ...people I've never cooked for... this is what I make! It's DELICIOUS! In fact, I made it for our TMOM Christmas party & the pan was licked clean...well, not literally, but there wasn't any leftover at all!! And I always make a little extra sauce to serve it over bowtie pasta... YUM!!
Chicken Tortilla Soup - I found the original recipe on the PW website, but tweaked it for our own personal tastes. Feel free to click that link to see what I did, but here's a YUMMY looking picture :
My husband is Italian... like grandparents came over on the boat... Italian! So we have lots of family recipes ...some of which I'm not allowed to share, but one in particular, I want to share here. It's called Wedding Soup! There is an "easy" way to make it... Open 1 Progresso Chickarina Soup can and 1 Progresso Wedding Soup can, plus add extra spinach & some extra pasta & chicken broth! The two soups combined are similar in style to this recipe!
I did it the "easy" way a couple of weeks ago for Xander's class (they were having a soup day). BUT, I hated doing that because the REAL way of making it is SO MUCH BETTER!! His teacher is asking for the recipe... I chuckle inside and think, "All I did was open cans," but I feel like I should give her the REAL recipe...right?? It is MUCH more time consuming to make it for the reals, but it's so worth it! Here goes...It makes A LOT!
Italian Wedding Soup

Soup:
28 Cups of chicken broth (approximately 224oz)
1 onion (chopped)
2 stalks celery (chopped small)
2-3 lbs fresh Escarole greens OR spinach
(escarole is BETTER, but hard to find in Oklahoma, so I sometimes have to settle for spinach)

1/2lb cooked small noodle pasta (pastina, ditalini, or acini di pepe)
salt & pepper
*Mix all of the above together & allow to simmer
Mini Meatballs:
1lb lean ground beef
1 egg
1/4 C bread crumbs
1/4 c water
2tbsp parsley
1Tbsp garlic salt
1/2 C parmesan cheese
1tsp black pepper.
*Mix all of above & form into SMALL balls. Cook in pan with boiling water for about 30 minutes, then add to soup mixture.
This soup is AMAZING!! It's not super difficult, but there is a lot to it!
I hope you'll give it a try and fall in love with it like I did!
We top our bowls of soup with lots of parmesan cheese. You can also top with croutons if desired!
Croutons:
7 eggs
1Tbsp flour
1tsp baking powder
3 Tbsp grated romano cheese
parsley, salt & pepper to taste
*Beat all ingredients & spread into 9X13 greased pan. Bake 30 minutes at 325 degrees (until golden brown). Cut into tiny squares.

ReplyDeleteAuthor note : for the soup, you CAN use less broth. It would probably be good with 20-22 cups. Just depends on how broth-y you want it!
