Two days of Delish

Yesterday, I made REAL refried beans (not the canned already mushed ones) AND I made REAL tacos with corn tortillas! It was a super yummy dinner. Even Xander oo'd and ah'd over how great the beans were- he had a whole bowl all to himself!

Today, I slept all day, like I do most Sundays. So I told Tim to find something to do with PepperJack cheese. He's good at finding recipes and I'm good at executing them. I told him that when I got up, I wanted a game-plan so it wouldn't take all night to figure out what was for dinner! SO... he found this recipe on the  Eat at Home blog found HERE . This is the picture that caught Tim's attention:


He saw the picture and thought, "This is everything Rachel loves" ... because I cook EVERYTHING with my Lawry's seasoning and I absolutely LOVE Sweet Baby Rays BBQ sauce. AND it was easy! I seasoned both sides of the chicken with Lawrys, plus garlic powder and onion powder. Then I baked them at 350 degrees until fully cooked. I used the basting brush to spread the BBQ sauce on both sides of the chicken then topped with shredded pepper jack cheese! OH WOW... this will definitely be a keeper. It was easy and the mixture of the sweet barbecue sauce PLUS the spicy pepper jack cheese was PERFECT! I also added some cheese to real mashed potatoes and served it all with a side of fresh steamed broccoli !!!

This is the original post's picture. Mine looked similar, but I used shredded cheese, not sliced!


Easy and Delicious all in the same meal???

Funny Xander-ism... I asked him what he learned this week in school. His reply, "We learned so much that I think my head is going to explode. I can't tell you just one thing, but my favorite part of school is recess!" Definitely a typical kid! I love that he thinks his brain is going to explode!! LOL

  1. I do the same thing, but with bacon under the cheese, and I use mozzarella so it's not too spicy for the kids. Always with garlic mashed potatoes and broccoli. :) Great minds think alike.
