Eggplant Parmesan

Tim has been craving eggplant... I CAN'T STAND EGGPLANT!! But, because I just love him so darn much, I agreed to make eggplant parmesan for dinner tonight...along with pasta with meat sauce (for me). I agreed to try one piece... it LOOKED great! It tasted pretty good...especially considering I don't like it! LOL. So, since I enjoyed it SO MUCH MORE than I expected I would, I decided to blog about it! FYI: Tim loved it too... so did Xander! 

SCORE!!!

Use one eggplant; cut into 1/2 inch slices. Lay flat and salt each piece to allow it to "weep" (the salt pulls out the bitterness of it). Rinse and pat dry. 

Coat with flour on both sides


Dip in egg


Coat in crumb mixture. I used Italian bread crumbs, Panko, plus seasonings
(Italian seasoning, pepper, Lawry's, garlic powder and onion powder)


Skillet fry in a thin layer of oil
**Remove each piece from the oil and allow to drain on a paper towel. Place each piece in a 9X13 baking dish, top with pasta sauce and Italian blend or Mozzarella cheese. Bake at 350 degrees until the cheese is melted (5-ish minutes) and Voila!! A yummy dinner! We served it with penne pasta & meat sauce. All of the kids tried a couple of bites, only Xander said he loved it; Tim enjoyed it, as did I! I will definitely make this again!
