Yet another Snow Day

Today was CRAZY! When I went bed last night, the sleet was just beginning... the news was calling it "thundersleet"... kinda crazy, but it sounded like a thunderstorm, yet there was freezing rain hitting my windows! I was awakened again at 3 a.m. by more thunder; this time the house was shaking. I almost thought it was a summertime thunderstorm; yet when I looked outside, the ground was lightly covered in a dusting of white. Xander woke me up at 7:30 this morning saying "The snow started mommy!!" So when I got up, this is what I found:

As you can see, both cars are kinda stuck! Neither of us will be leaving home any time soon! The snow drift between my car and the garage door is just under 3 feet deep! I am NOT looking forward to digging out of here!! I cleared a path for the dogs...poor little ones, they wouldn't go potty unless they could find grass!

With the fun snow, we made snow ice cream: YUMMY! How on earth, you may wonder?? Well, you get 4-5 Cups of CLEAN snow & put it in the freezer until you're ready to use it. In a bowl, mix 1 cup milk, 1/2 cup sugar, and 1/2 tsp vanilla (plus we added chocolate chips)... stir until sugar is dissolved; then slowly stir in snow until desired consistency! Kids, Tim, and I all loved it!

For dinner, we had Chicken Fajita Chowder1 lb chicken (chopped), 1 each: orange, red, and yellow bell peppers (chopped), 1 medium onion (chopped), 1 can enchilada sauce, 1 lb frozen corn, 1 small can green chilis, 4 oz shredded cheese, 3 cups water, 1 Cup uncooked brown rice, 1 cup sour cream, chili powder or other "spicy" seasonings, plus salt & pepper as desired, and tortilla chips

Cook chicken in skillet with peppers and onion until chicken cooked through. In separate pot, mix water, corn, enchilada sauce, chilis, rice, seasonings and bring to boil. Add chicken, pepper, onion mixture. Allow to cook for 25-30 minutes or until rice tender. Remove from heat; add cheese and sour cream.

Serve with extra shredded cheese and crumbled tortilla chips.
