Yummy dinner and withdrawals!

I am having withdrawals.

There... I said it...

I miss blogging!

For the last year, I have invested SO much time blogging.... sharing my day on this open forum. I have written down every "memorable" thing that needed to be written down, and I have posted every "great" picture that I had to post. But now, it's a new year. New resolutions... and I feel like part of me is missing! So here I am again! Saying hello! Have you missed me? I mean, I've only posted 6 times this year.

I spent the day with a great friend. Had dinner with my family plus my mom. Watched American Idol ... even though I say every year how I'm not ever watching again! I ate some boiled peanuts for my bedtime snack (if you have never had boiled peanuts, you are TRULY missing out... my friend, Sandi, said "That's like crack for us Floridians!" Hahaha) And I started playing Words With Friends! LOL... yes, I know, that part is silly, but whatever...it's fun!

Potty Training isn't going all that well...sadly! Last week, Bella was adamantly against doing it- so I figured if it's going to be a fight, then that's not going to convince her to do it... so since Jonathan was willing, I kept him in pull-ups all week and was not all that successful! He went potty every time I would say to... let me clarify... he went TO the potty. He didn't actually potty except the ONE time that he pooped! I was thrilled! The two big boys did the poop last, so Jonathan's first potty experience being the poop was exciting for me!!! He made about 5000 trips to the bathroom during last week, and not one time did he pee! SO, this week, I try again... and nope! He sounds just like Bella, "No my want to go potty... No my want to wear pull ups" ... very adamant about this. So... I guess I will wait a couple more weeks and try again. I wish this part of life wasn't so mind-boggling and stressful on mommy!!



Dinner was FANTASTIC! We had a garlic lime chicken served with fajita rice and real refried beans! Here's what I did:

For the Chicken:


1. In a small bowl, mix the following:

*1 tsp salt
*1/2 tsp black pepper
*1/2 tsp paprika
*1/2 tsp cayenne pepper
*1 tsp garlic salt
*1/2 tsp onion powder
*1/2 tsp parsley

... I used 4 big boneless, skinless chicken breasts, then cut them in half. So I had 8 pieces of chicken. After mixing all of the above seasonings, generously sprinkle the chicken with it.

2. In a large skillet, saute 3 cloves of minced garlic in 3 Tbsp butter & 1 Tbsp olive oil until the garlic is soft. Then add the chicken. Cook on both sides until cooked through (time depends on how thick the chicken pieces are).

3. When the chicken is JUST about ready, pour in about 1/2 C lime juice (concentrate). I poured right on top of the chicken. Then I let it simmer in the lime juice for another 1o minutes- turning the chicken a couple times to make sure it was well coated in lime juice!



For the rice:
* I cheated... I used the Fajita Rice packets by Knorr Rice Sides! Can't take ALL the credit for the food, right??



For the beans:
*In a saucepan, heat 1 Tbsp veg oil until hot. Pour in 2 cans of undrained pinto beans. Mash them all up with a potato masher. Cook continuously on med-high heat. They'll be pretty runny at first, so let them cook, stirring often to make sure it doesn't stick to the pan. After about 15 minutes or so, they were thick enough... then I let them sit for maybe another 5 or 10 minutes to set. I add a little bit of cheese and 1/4 a cup of salsa to them as well. My mom LOVES refried beans at only a couple of places... most beans don't satisfy her palate... BUT she LOVED mine! And they are SO easy to make!
