Yes, I realize this post is a couple days late, but better late than never right?
On Memorial Day this week, I made some "Irresistible Chicken"... well, that's what my brother called it anyways. It was pretty amazing, if I do say so myself! I worked all night Sunday night, so I put it in the crockpot when I got home Monday morning, then when the family came over for dinner it was DELICIOUS!
Here's what I did...obviously you can shrink it down for a smaller group- or not, if you want leftovers!
6 lbs boneless skinless chicken breasts
24 oz Sweet Baby Rays BBQ sauce
20 oz bottle Coca Cola
1 lemon juiced
1 onion chopped - large pieces
**Cook all day- I did 6 hours on high heat... adjust your heat depending on how long you'll be cooking. BUT oh.my.gosh. it was AMAZING! The chicken was very tender. It soaked up the soda as well as the BBQ sauce and had a really good flavor. For the leftovers, I shredded it for pulled chicken sandwiches on burger buns and that was pretty awesome too! This was DEFINITELY a "keeper" recipe!

We had a great time with the family that evening- lots of yummy food: My chicken, plus corn on the cob, baked beans (my mom makes the best!), veggie salad, potato salad, fruit salad, cheese cake, and brownies! Great right? PLUS, the three littles all got to shuck corn for the first time! Xander is an old pro, but the other three tried and loved it! It was lots of fun!
I love my Bunch... and I LOVE spending the holidays with them!
